This is not really your grandmother's chicken soup recipe (at least not my grandmother's recipe).  We will get to that some other day.  This recipe is just VERY quick and easy and everyone loves it.  No one needs to know you didn't slave all day over a hot stove.....

1 package wonton skins from the supermarket (near the produce)

2 carrots peeled and cut into circles or half moons

2 parsnips peeled and cut into circles or half moons

* 2 chicken breasts cooked plain and diced

Canned or homemade chicken broth (about 5 cups -  more or less as you wish)

 

Cut about half the package of the wonton skins into wide noodles and cook very briefly in large pot of salted boiling water.  Drain.  Place chicken broth in a large pot and bring to a gentle boil.  Add the vegetables and let cook 2 -3 minutes.  Add chicken and noodles and cook for about a minute.  Serve.  Delicious and easy.

*  The chicken breasts can be gently poached in salted simmering water for about 8 minutes or baked in a low oven (about 325 degrees) for about 10 - 15 minutes or until no longer pink inside.  Allow to cool and dice into small squares.
