Macadamia Encrusted Mahi Mahi   

This recipe is so delicious.   Fresh mahi mahi is often hard to find but you can buy beautifully cut pieces of frozen mahi mahi at Trader Joe's.  The fish can be served with a caramelized pineapple sauce (recipe below)  or just plain.

For the fish:

4 mahi mahi fillets                2 beaten egg whites

1/4 cup flour                         1/4 cup crushed macadamia nuts mixed with 3 TBS                                           panko crumbs (most supermarkets have these)

A hint  before you begin:  Toast the nuts in the oven for about 12 minutes at 325 degrees before crushing to make them crunchy and release the oils.  Better still,  buy roasted,  unsalted macadamia nuts at Trader's.  The panko is not essential but will help draw some moisture out of the nuts and make the topping more crunchy.

Preheat oven to 400 degrees.  Dredge fish in flour,  then beaten egg and place on a baking sheet lined with parchment paper.  Top each piece with the nut mixture and press firmly to adhere nuts to fish.  Bake for  10 - 15 minutes.

Caramelized Pineapple Sauce

1 tsp butter                                        1 tsp ginger, peeled and minced

2tbs onions minced                         1 1/2 cups stock - veg or chicken

1/2 cup diced pineapple                1  tsp vanilla bean paste (at Trader's)

1/4 cup frozen pineapple juice concentrate

11/2 tbs. rice vinegar                        1/2 tsp low sodium tamari

 

In medium saute pan,  melt butter over low heat.  Add onion and cook until translucent.  Add pineapple and cook until browned but not burnt.  Add pineapple juice and vinegar and cook 5 - 10 minutes more until thickened.  Add ginger and stock and boil.  Add vanilla.  Puree whole mixture in food processor.  Serve with fish.
