Back to the Teapot

These are delicious and also require little effort.  The trick is a hot oven and no moving the potatoes around on the pan.  Just let them sit and brown.

                                        Ingredients

New potatoes (as many as you want) -  scrubbed and sliced in half

Butter

Salt

Sage or other herb if you like

Preheat oven to 425 degrees.  On a baking sheet with a rim,  place a large enough piece of butter that will cover the whole sheet when melted.  Place sheet in oven to melt butter.  Remove and swirl butter around so that the bottom of the pan is covered.  Sprinkle sheet with salt and herbs.  Place potatoes white,  flat side down on the sheet.  Place on middle rack of oven and allow to roast at least 30 minutes.  Check one potato at the end of 30 minutes.  If the white face has turned a golden brown and the inside is tender,  they are done.  If not continue to roast and test every 5 -10 minutes.

When done,  remove and enjoy!
