This recipe is DELICIOUS!!!  I adapted  the recipe from Ina Garten's The Barefoot Contessa Cookbook  adding cilantro,  which I love,  and lowering the sugar content so it would compliment the sweet coconut of the coconut chicken without overpowering the mouth with sweetness.  There are lots of ingredients.  So measure them all out first and then this recipe is a snap!!

 

1 - 2 TBS  Extra Virgin Olive Oil

1 TBS  Sesame Oil

2/3 Cup red onion diced small

1 1/2 tsp.  minced garlic

1/4 tsp or more crushed red pepper flakes

2 TBS  each of  Red wine vinegar,  light soy sauce and dry sherry

2 TBS brown sugar

2 TBS Ketchup

1/2 Cup smooth peanut butter

2 tsp  fresh lime juice

1/4 cup cilantro leaves chopped coarsely

chopped peanuts for garnish

Cook first 5 ingredients in a heavy saucepan on med low heat until onions soften (10 minutes).  Dump in remaining ingredients and whisk smooth.  Add warm water if too thick.

Garnish with peanuts,  extra cilantro and an extra splash of lime.  Easy,  eh?
