Polenta Hearts with Gorgonzola Sauce

Polenta is a great comfort food which can be served so many ways.  Serve it loose in a dollop like mashed potatoes or allow it to become firm and slice it into squares or triangles to be fried or grilled.  Here is a polenta with a Valentine twist!

1 cup 3 minute Polenta (available at most stores -  Pastene brand is good)

1 quart water (or milk for extra richness)

salt to taste (always salt the water heavily to flavor the polenta)

Boil the water.  Add salt.  Then slowly pour in the polenta and stir until it is the consistency of cream of wheat cereal. 

Pour polenta onto a cookie sheet fitted with parchment paper.  Smooth until polenta is about 1/2 inch thick and even on the sheet.  Refrigerate at least a few hours.

Using heart shaped cookie cutter,  cut out shapes and grill on  very hot,  lightly oiled grill pan until outside is a bit browned and inside is warmed through.

For the gorgonzola sauce,

Heat up 1/2 cup cream.  Then add 1/4 cup crumbled gorgonzola and a splash of sherry.  Taste and adjust seasoning.   If mixture is too thick,  add milk or water until desired consistency.  Pour over polenta hearts.  Sprinkle with more gorgonzola crumbles or parmesan cheese.
