Popovers are relatively easy to make and very elegant to serve.  Everybody loves them!!!  For best results just be sure to follow these guidelines:

1. Always use ingredients at room temperature

2.  NEVER open the oven while they are baking.

3.  Serve them immediately.

This recipe makes 6 - 12 popovers depending on the size of your pan.  True popover pans work best but a muffin tin will do.

                                           Ingredients

1 1/4 cup all purpose flour                2 Tbs.  unsalted butter,  cut into 12 small pieces

1/4 tsp salt                                            1 Tbs.  melted unsalted butter

3 large eggs

1 1/4 cup milk

Preheat oven to 400 degrees.  Spray popover pan with Pam.   In a blender or mixer,  blend together flour, salt, eggs, milk and melted butter until mix is smooth and there are no lumps.  Place 1 small piece of the butter in each tin and bake the pan for 2 minutes in the hot oven.  Remove the pan and fill about 3/4 of the way with the batter.  Return to oven and bake at 400 degrees for 20 minutes.  Then reduce the heat to 300 degrees and bake for 15 - 20 minutes more or until very golden.  Serve piping hot!!!
