This is a great dessert sipping drink.  Also tastes great over raspberries.  Or you can reduce it to a syrup by boiling it gently until it thickens and serve it over cake or ice cream!  Yum!

The cordial takes a good month to marinate to its full potential but it is delicious already after a week or two.  In other words,  make it now for Valentine's Day!!!

 

1 Gallon Vodka

1 Gallon (4 pints) raspberries

1 - 2 cups sugar

 

Put raspberries at bottom of large container (glass is best) that can hold over 2 gallons of stuff.  In a separate bowl  mix vodka with sugar.  Pour over raspberries and cover tightly.  Every day for about a week,  stir gently to help sugar dissolve.  Try not to break raspberries when stirring.

Taste weekly (or daily if you want!)  to check for doneness.  Enjoy!
