Roast Rack of Lamb

This is a very easy recipe. Lamb is so expensive so save this for a special occasion, like Valentine's Day. 1 Rack of Lamb (for two people - 3 -4 chops per person) 1 Large Sprig Rosemary 10 Large Mint Leaves 2 Cloves Garlic 2 teaspoons salt pepper to taste 1/4 cup olive oil Preheat oven to 400 degrees (bake or roaast) Place rosemary, mint, garlic, salt and pepper in a small food processor and chop fine. Slowly drizzle in the olive oil to make a paste. Cover the lamb with the paste and let sit and marinate about a half hour at room temperature. Place in oven for 25 minutes. Remove and allow to rest covered loosely with tin foil for about 15 minutes. Slice between the bones and serve 3 - 4 chops per person. Back to Recipes |
