There is nothing like roasted garlic.  And it is healthy!!!!!  

It is so simple to do and it tastes great on bread or in a sandwich or a soup  or just about anywhere!!!!   Roasting the garlic mellows its flavor significantly  and creates a smooth paste that is delicious as a spread.

Simply preheat the oven to about 375 degrees.

Slice off the top of a head of garlic crossways (like you would cut off the top of a jack o' lantern).  Place in a piece of foil and drizzle with olive oil and salt.  Close up the foil and place on a cookie sheet or roasting pan in the oven for about 40 minutes.  Let cool.  Open the foil and squeeze the bulb of garlic.  The cloves should pop right out of the bulb.
