Salmon in Parchment

Cooking in parchment paper is a very healthful way of preserving the vitamins and juices in a dish without adding too much fat. You are basically steaming the food in a pouch. If you have seen the show on which we made this dish, you will remember how to fold the parchment. Basically, you take a large piece of parchment and fold it in half and cut out a huge half Valentine so that when you unfold it you have a big heart. Place some julienned vegetables to the right of the crease (we used carrots and sugar snap peas). Then place the salmon on top of the veggies. Sprinkle with salt and pepper, lemon slices, pesto if you like or some drizzled olive oil. A small pat of butter is nice but not essential. Close over the top of the valentine and seal in the salmon as demonstrated on the show. If you missed the show, cut out a very large circle of parchment instead. Place veggies, then fish, then spices, herbs, lemons, etc. on top. Gather the parchment into a bundle atop the fish and tie with butcher's twine. Bake bundles in a 350 degree oven for about 25 minutes. Serve with steamed rice for a healthy treat. Chicken breasts or any other type of fish are also nice with this method. |
