A very simple preparation.  Use leaf spinach that you buy in bunches.  Leave most of the stem on and just cut off the tips.

1 or 2 bunches spinach

2 cloves garlic minced

olive oil

Heat pan until very hot.  Add olive oil and garlic and heat but do not allow garlic to brown.  Add spinach and move around the pan until barely wilted.  Sprinkle with salt if desired and serve.
